Gluten Free Zucchini Pizza

This is a great alternative if you are looking for a low-carb gluten free pizza! I can't stress this enough as to how good this taste and how similar it is to a real pizza. Don't feel bad for having two large slices, this recipe is low in calorie! (forgive my for my terrible pictures, I didn't have my canon on me at the time!) Zucchini Crust Ingredients:
  • 2 egg whites
  • 2/3 almond flour
  • 1 cup cheddar cheese
  • 8 cups shredded zucchini
  • 2 cloves garlic (minced)
  • 3 tsp oregano
  • 1 tsp basil
  • 1/2 tsp salt
  1. Preheat oven to 375 and spray a baking sheet with pam.
  2. Combine all the items above into a large bowl. You may need to add additional flour to make the consistency of the zucchini to be like dough. *note this will not yield a pizza dough consistency. Think brownie batter! As long as everything is well combine and can hold some shape you are good to go!
  3. Spread the ingredients onto the baking sheet and bake for 15 mins.
Pizza Sauce Ingredients:
  • 4 large tomatoes blended
  • 2 tbls olive oil
  • 2 garlic cloves (minced)
  • 1 tbls oregano
  • 3 basil leaves
  • pinch of salt and Pepper
  • 1/2 sweet onion minced
  1. In a sauce pot add olive oil and onions and sauté over medium heat
  2. Once translucent, add garlic and sauté until brown.
  3. Add remaining ingredients and bring to a simmer.
After 15 mins is complete, remove crust from the oven and spread sauce over crust. zucchini crust Add your favorite cheese, I always go for the low-fat skim mozzarella cheese. Bake for an additional 8 mins and enjoy! XOXO, Kelly   #thinkingthinbykc...

Zucchini Pizza Bits

If you enjoy zucchini and some good tomato sauce then you are sure to enjoy this recipe. Ingredients:
  • 2 large tomatoes
  • 2 tbsp basil
  • salt & pepper
  • EVOO
  • 1 tbsp oregano
  • 1tsp garlic powder
  • 1 zucchini
  1. Preheat oven to 375 and spay a baking sheet with pam.
  2. Slice the zucchini thin and line the entire baking sheet with the zucchini slices.
  3. Mix together all remaining ingredients into a bowl tomato topping
  4. Place a spoon sized amount of tomatoes onto zucchini. zucchini bites
  5. Bake for 15 mins.
  6. Remove from oven and sprinkle on some low-fat modzarella cheese and place back into the oven for around 10-15 mins. (As you can tell it makes a little bit of a mess on the baking sheet since everything slides around)zucchini bitesServe once cooled down. You can even eat these cold the next day (just like cold pizza) they are fantastic!

Apple Salsa

  • 1 tomato
  • 3/4 onion
  • 3 tbsp line juice
  • 1 jalapeño
  • 2 apples (granny smith)
  • 2 tbsp cilanto
  • 1 tbsp honey
  • Salt and Pepper
IMG_9882 Finely chop tomato, onion, jalapeño and apples and stir together in a bowl. IMG_9886Incorporate lime juice, cilantro, honey and salt & pepper for taste. Mix all together and place in the refrigerator for a few hours for all the ingredients to marry. Serve with some low-calorie, corn chip and enjoy. This has been a big hit at all my parties and I am always asked for the recipe to here it is!

Healthy Egg-White Muffins

Breakfast on the go!

The most important meal of the day is breakfast. It gets your metobloism going, provides you energy and when you go without eating breakfast, you’re more vulnerable to cravings and less likely to make healthy choices in the morning and throughout the day. My typical morning I eat about 4-5 egg whites, a piece of toast and I have a cup of coffee & juice. However, when I know its going to be a busy work week or I want to spend an extra 10 mins in the gym in the morning I default to making Egg White Muffins the night before! This recipe can be eaten cold or hot and is great when you are in a rush! Ingredients:
  • 1/2 cup Tomatoes
  • 1/2 cup Green Peppers
  • 1/4 cup Basil
  • 3 slices cooked turkey Bacon (can use Ham, turkey Sausage, any type of meat you would like essentially! that variations are endless
  • 1 cup Egg Whites
  1. Preheat oven to 375 degrees. Place muffin liners into a muffin tin.
  2. Fill each muffin tin 2/3 full with vegetables and meat.
  3. Pour egg whites slowly into each muffin tin until half way full. I topped some with cheese and pepper per Joe's request!
  4. Bake for 20-25 minutes or until muffins have risen and are slightly browned.
