Healthy Egg-White Muffins

Breakfast on the go!

The most important meal of the day is breakfast. It gets your metobloism going, provides you energy and when you go without eating breakfast, you’re more vulnerable to cravings and less likely to make healthy choices in the morning and throughout the day. My typical morning I eat about 4-5 egg whites, a piece of toast and I have a cup of coffee & juice. However, when I know its going to be a busy work week or I want to spend an extra 10 mins in the gym in the morning I default to making Egg White Muffins the night before! This recipe can be eaten cold or hot and is great when you are in a rush! Ingredients:
  • 1/2 cup Tomatoes
  • 1/2 cup Green Peppers
  • 1/4 cup Basil
  • 3 slices cooked turkey Bacon (can use Ham, turkey Sausage, any type of meat you would like essentially! that variations are endless
  • 1 cup Egg Whites
 
  1. Preheat oven to 375 degrees. Place muffin liners into a muffin tin.
  2. Fill each muffin tin 2/3 full with vegetables and meat.
  3. Pour egg whites slowly into each muffin tin until half way full. I topped some with cheese and pepper per Joe's request!
  4. Bake for 20-25 minutes or until muffins have risen and are slightly browned.

Its as SIMPLE AS 1, 2, 3

Flavored Ice Cubes

A few weeks ago Joe and I had a big house warming party with all our friends and family. One of the gifts we received was a king size ice cube tray! I always like to infuse my water with all sorts of veggies and fruits so of course I had to make flavored ice cubes for my morning water! Below are a few recipes that I have currently tried! IMG_9860

Roasted Tomato Bruschetta

Ingredients:
  • Basil
  • Cherry Tomatoes
  • Mozzarella
  • Baguette
  • Parmesan cheese
  • Evoo
  • Parsley
  • Chives
Instructions:
  1. Preheat oven to 375
  2. Slice a few dozen cherry tomates in half and place in a bowl.
  3. Mix in 1/4 cup EVOO, a hand full of chopped basil and a tablespoon of parsley and chives. Incorporate together.
  4. Place mixture on a baking sheet and sprinkle the tomatoes with some parmesan cheese.
  5. Bake in the oven for 20-25 mins

6.   While the tomatoes are cooking cut a few slices of bread and place a small piece of mozzarella cheese in the middle. Place in the oven and let the bread toast and the cheese melt.

7. Once everything is cooked completely place the roasted tomatoes onto of the baguette with the melted cheese and ENJOY!

Weekly Wednesday Workout v14

This weeks workout is the Viper Press! As you can tell I am a little bit on the struggling side. 50 pound presses are rough to say the least. Please don't focus on my terrible form, i'll get there next time. One of the main reasons I make all these videos is so I can look back at my form/weight/reps and make improvements from there. Chocolate Protein Mug Cake Recipe

Ingredients: 
  • 1 Scoop Chocolate Whey Protein
  • 1 Tbs Cocoa Powder
  • 1 Tbs Baking Powder
  • 2 Stevia packets
  • 2 egg whites
  • 1 Tbs Coconut flour
  • Add water to moisten
Instructions:
  1. Mix all the ingredients into a mug
  2. Microwave for 1.5 - 2 mins
  3. Top with some peanut butter and whip cream
  4. ENJOY
